Brewer's spent grain (BSG) is the main solid by-product of the brewing industry and is primarily used as animal feed, despite its potential as a source of nutritionally valuable compounds. This study investigated the influence of different drying conditions on the chemical composition of BSG and evaluated its potential for food applications and further valorization. BSG samples were analyzed to determine moisture content, macro- and microelement composition, lipid, protein, total nitrogen, and sugar contents. The analytical results were compared to assess the effect of drying conditions on the chemical composition of BSG and the preservation of its nutritionally valuable constituents. The findings provide a basis for the further valorization of brewer's spent grain as a valuable secondary raw material for food applications.
