Phenol is recognized as one of the priority organic pollutants in aquatic environments due to its high toxicity and widespread industrial use. In this study, the adsorption performance of a carbon adsorbent produced by carbonization of a mixture of banana, potato, and carrot peels was evaluated for phenol removal from aqueous solutions. The effects of the initial solution pH and phenol concentration on the adsorption process were investigated. The adsorbent exhibited high phenol removal efficiency over a wide pH range (2–12), with the highest performance observed under slightly acidic to neutral conditions, while only minor variations were detected under strongly acidic and alkaline conditions. The maximum adsorption capacity reached approximately 190 mg g⁻¹. The equilibrium data were analyzed using the Langmuir, Freundlich, and Temkin adsorption isotherm models. Among the applied models, the Langmuir isotherm provided the best fit to the experimental data, indicating predominantly monolayer adsorption on a relatively homogeneous surface. The obtained results demonstrate that the synthesized carbon adsorbent represents an efficient, low-cost, and sustainable material for the removal of phenol from contaminated water.
